
We’re not crazy about liver.
But it’s super healthy so we eat it once a week. Sometimes, we cook it with salt and heavy cream (and some paprika).
Our favorite is liver pancakes though. Normally, we serve them with melted cheese or a big slice of cold butter.
They taste good. Even our picky dog, who doesn’t like liver, loves them.
If you make enough for two days, know that they will be a little green the second day. There’s nothing wrong with them.
It’s just the iron in the liver that turns green.
