Here’s How It’s Done

• 1. Heat the oven (top + bottom) to 375F / 190C. No steam.
• 2. Add 1 cup (250 ml) of full-fat cottage cheese to a bowl.
• 3. Crack two whole eggs and add them to the bowl.
• 4. Mix until you have one smooth mixture.
• 5. Pour the mixture onto the center of a piece of parchment paper that you've put in a half-sheet pan. The mixture should take up approximately an 8 x 10 rectangle.
• 6. Bake for around 25 minutes.
• 7. Turn the flatbread upside down and bake again at the same temperature and settings for approximately another 5 minutes.
